INGREDIENTS

2 tbsp active dry yeast
1/2 cup warm water
1 tsp granulated sugar
2 1/2 cups all-purpose flour
2 large eggs
1/4 cup granulated sugar
2 tbsp unsalted butter, room temperature
2 tsp salt
canola oil, for frying
strawberry jelly
lemon curd
confectioner’s sugar
LET'S GET COOKING...

Combine the yeast, water and 1 tsp sugar in a bowl and let stand for 10 minutes.
Place the flour in a large bowl and add the eggs, yeast mixture, 1/4 cup sugar, butter and salt. Stir until fully combined.
Transfer to a floured surface and knead for 8 minutes, until the dough is smooth and bounces back when you poke it. Transfer to a bowl greased with oil and cover with plastic wrap. Place in a warm area and let rise until doubled in size, about 1 hour.
Turn the dough out onto a floured surface and roll out the dough until it is ¼-inch thick. Using a 2-inch round cookie cutter, cut out 20-30 rounds. Transfer to a floured baking sheet and cover with plastic wrap. Let rise for 20 minutes.
Pour the oil into a medium-sized pot and heat using a deep-fry thermometer until it reaches 370F. Fry the doughnuts a couple at a time, cooking for 30-40 seconds per side. Transfer to a wire rack to cool and drain.
Poke holes into the sides of the doughnuts with a chopstick. Place the strawberry jelly and lemon curd into piping bags and fill the doughnuts with both fillings.
Place the confectioner’s sugar in a bowl and add one doughnut at a time, tossing to coat all sides in icing sugar. Enjoy!
