Ingredients:
For Biryani Masala Powder:
1 tbsp Coriander Seeds
1/2 tbsp Cumin Seeds
1/2 PS Nutmeg (Jaiphal)
1 PS Black Cardamom
1/2 PS Javitri Phool (Mace)
6 PS Green Cardamom
1/2 tbsp Black Pepper
5 PS Red Chilli
For Eggs:
7 Boiled Eggs
Little Turmeric Powder
Little Red Chilli Powder
Little Salt
For Biryani:
3 tbsp Oil
10-12 PS Black Pepper
2-inch Cinnamon
4 PS Green Cardamom
1/2 PS Javitri Phool (Mace)
1 PS Bay Leaf
4 PS Onion
6 PS Green Chilli, chopped
3 tbsp Ginger Garlic Paste
1 tbsp Homemade Biryani Masala
1 tbsp Red Chilli Powder
Little Water
2 PS Tomato
Salt to taste
2 PS Potato
1/2 Cup Water
50 GM Yoghurt (Dahi)
Boiled Eggs
For Rice:
Water
1/2 tbsp Black Pepper
1 tbsp Shah Jeera (Caraway Seeds)
3 PS Green Cardamom
1 PS Bay Leaf
1 tbsp Oil
Salt to taste
750 GM Biryani Rice (soaked)
For Garnish:
Mint Leaves
Coriander Leaves
Fried Onion (Birista)
Saffron Water
2 tbsp Clarified Butter
Instructions:
Prepare Biryani Masala Powder
Dry roast coriander seeds, cumin seeds, nutmeg, black cardamom, javitri phool, green cardamom, black pepper, and red chilli. Make it into a powder.
Prepare Eggs
Add little turmeric powder, red chilli powder, and salt to boiled eggs. Mix well.
Cooking
Heat oil in a pan, add black pepper, cinnamon, green cardamom, javitri phool, and bay leaf.
Add onion, green chilli, and ginger garlic paste. Cook well.
Add homemade biryani masala, red chilli powder, and little water. Cook for a minute.
Add tomato, salt, potato, and half cup water. Cook until the potato is tender.
Add yoghurt and boiled eggs. Mix well.
Cook Rice:
Boil water with black pepper, shah jeera, green cardamom, bay leaf, oil, and salt.
Add soaked biryani rice and cook until 90% done.
Assemble Biryani
Layer cooked rice and the egg mixture in a pot.
Garnish with mint leaves, coriander leaves, fried onion, saffron water, and clarified butter.
Serve:
