VANILLA SNAP BISCUITS RECIPE

Ingredients:
185 g unsalted butter
1 cup caster sugar
1 1/2 tsp vanilla extract
1 egg
1 egg yolk
2 3/4 cups plain flour

Method:
1. In a bowl, cream butter, sugar and vanilla extract.
2. Add in 1 egg and 1 egg yolk. Beat until combined.
3. Sift in plain flour. With a spatula, mix until dough is formed.
4. Mix with hand and transfer into a clean bowl, cover with a cling wrap, then refrigerate for 30 minutes.
5. Pre-heat oven to 140 degrees Celsius convection or 160 degrees Celsius conventional.
6. Take out dough from the fridge, roll it with a rolling pin, them cut it with a round cookie cutter.
7. Place dough on a lined tray.
8. Bake it for 15 minutes at 140 degrees Celsius convection or 160 degrees Celsius conventional.
9. Let biscuits cool down on rack before serving. Enjoy!
