Preparation Steps:
Roast shredded coconut until golden brown and grind it into a smooth paste.
In a pressure cooker, heat coconut oil and add chopped potato, carrot, green peas, turmeric powder, and salt. Mix well and cook until one whistle.
In a separate pan, heat coconut oil. Sauté onion, green chilli, curry leaves, and ginger-garlic paste.
Add turmeric, chilli, coriander, garam masala, pepper powder, and salt. Add chopped tomatoes and cook until soft.

Stir in the roasted coconut paste and cook for 2 minutes.
