We know about Southern cornbread and Northern cornbread, but this is how they make cornbread in South Africa. It's called "mielie bread" or "mealie bread." Basically, it's a South African cornbread recipe, which uses a lot of actual corn. When I found this recipe, I don't the author ever made cornbread the way it's supposed to be made: in a cast iron skillet. South African or not, it's not cornbread if it doesn't sizzle when you add the batter to the pan. This produces a savory cornbread with a bit of sweetness. It's nothing like the cake-like "cornbread" served at most restaurants. This kind of cornbread is best eaten with lots of butter on top.
