RASAMALAI POPULAR INDIAN DESSERT 🍨 Share & tag your friends with sweet tooth 😄

What is your favourite Indian dessert? 😄

Ingredients:

Rasgullas (Cheese Dumplings):

1 liter whole milk
2 tablespoons lemon juice or white vinegar
1 cup sugar
4 cups water
4 cardamom

For Rasamalai Milk:

1 liter whole milk
1/2 cup sugar (adjust to taste)
1/2 teaspoon cardamom powder
1/2 cup crushed almonds and cashew
A few strands of saffron (optional)
1 tablespoon sliced almonds and pistachios for garnish
Instructions:

Making Rasgullas :

Heat 1 liter of whole milk until it gently boils.
Add lemon juice or white vinegar gradually, stirring, to curdle the milk.
Once curdled, strain through a cloth-lined colander to separate curds and whey.
Rinse the curds, squeeze gently to remove excess water, and knead into a smooth dough.
Divide into small balls and flatten slightly to form Rasgullas.
Shaping and Cooking Rasgullas:
In a large pot, bring 4 cups of water and 1 cup of sugar to a boil.
Carefully drop the cheese dumplings into the boiling sugar water with cardamom pods.
Cover and cook for 12-15 minutes on medium heat until they puff up.
Remove Rasgullas from the sugar water using a slotted spoon and set aside.
Preparing Rasamalai Milk:
In another pot, bring 1 liter of whole milk to a boil.
Add 1/2 cup of sugar, cardamom powder, crushed almonds, cashews and saffron strands (optional).
Simmer for 10-15 minutes, allowing the milk to thicken and infuse flavors.
Turn off the heat and let the milk cool to room temperature.
Assembling Rasamalai:
Gently squeeze the excess syrup from the cooked Rasgullas.
Place the dumplings into the sweetened milk.
Allow the Rasgullas to soak in the milk for a couple of hours in the refrigerator.
Serving Rasamalai:
Garnish with sliced almonds and pistachios.
Enjoy the delightful Rasamalai dessert chilled after a satisfying meal!
Note: Refrigerate any leftover Rasamalai, and adjust the sweetness to your preference by adding more or less sugar. This recipe yields approximately 12-15 Rasgullas, and the preparation time is around 2-3 hours, including chilling.
