James invites us to his distillery and introduces us to The Botanist gin, made using foraged wild plants gathered from all around Islay. He takes us out in the wild to do some foraging of our own, collecting some common nettles as well as few flowed leeks. We go on to make a lovely pesto out of those freshly foraged ingredients, mixed into some fresh tagliatelle.
