Sweet Dry Sevai or Sweet Dry Sewayyan (Vermicelli) is a popular Indian sweet snack made from roasted vermicelli noodles. Here's a simple recipe:

Ingredients:

1 cup vermicelli noodles
2 tablespoons ghee or oil
1 cup sugar
1/2 cup grated coconut (optional)
1/2 teaspoon cardamom powder
1/4 teaspoon saffron strands (optional)
Chopped nuts or dried fruits for garnish (optional)

Instructions:

Heat ghee or oil in a pan over medium heat.
Add vermicelli noodles and roast until golden brown, stirring frequently.
When it turns golden brown add sugar and nuts fry for another twofold minute then add milk and mix

Remove from heat and let cool completely.
Garnish with chopped nuts or dried fruits (if using).
Store in an airtight container for up to 3 days.

Tips:

Adjust sugar to taste.
Use a non-stick pan to prevent vermicelli from sticking.
Add a pinch of salt to balance the sweetness.
