Restaurant style Veg kolhapuri ❣️❣️Veg kolhapuri gravy ❣️
This veg kolhapuri is one of the rich and aromatic gravy you will find in restaurants and is super easy to make at home. Must try if you love such gravies and also the best side dish for chapathi, poori, naan ,pulka and even rice.
1. For kolhapuri masala, roast , cinnamon, cloves 3 , cardamom 3 , fennel 1/2 tsp, coriander seeds 1 tbsp, cumin seeds 1 tsp, pepper 1/2 tsp and red chilli 5-6. Roast well. Add 2 tbsp fresh or desiccated coconut, 1 tbsp poppy seeds. Roast well and grind to paste by adding water.
2. In a kadai, add 2 tbsp oil, veggies like cauliflower (blanched) , carrots , beans , boiled green peas. Once roasted , add capsicum, and onion at last and give a toss. Keep aside.
3. In a kadai, add bay leaf , 2 onions ,1 tbsp ginger garlic paste and saute till translucent. Add 2 red chilli and saute well. Add the kolhapuri masala and saute till raw smell goes.
4. In a mixer jar add 2 tomatoes and handful of soaked cashews . Grind to fine paste and add to the gravy. Add 1 tsp kashmiri chilli powder and cook till oil oozes. Add, sauteed veggies , garam masala 1/2 tsp and kasuri methi. Add little water and cook till oil separates. Serve hot with roti of choice. Enjoy!!
