1 tbsp Black Pepper
1/2 tbsp Salt

2 tbsp or 30ml of grease from the Standing Rib Roast Drippings
2 tbsp or 28g Butter
4.5 tbsp or 36g Flour
3 cups or 750ml Beef Stock
1/2 tsp Ground Thyme
1 Garlic Clove - Smashed
1 tbsp of Dijon Mustard
1 tbsp or 15ml Red Wine Vinegar
Salt and Pepper to Taste
