No fiddly quenelles, no gold leaf. Just chocolate, eggs, sugar, sometimes cream, and attitude. It whispers of existentialism and espresso. And while pastry trends swirl—foams, gels, spheres—mousse remains, impervious and iconic. It is the unofficial punctuation mark of the Parisian meal: elegant, democratic, and just slightly melancholy. A dessert that doesn’t need to impress, because it knows it already has.
