This one can be tricky to find, but it's easy to defeat. Anubys is in the secret room of the Sochen Cave Palace, which you can access by completing a puzzle with the waterfalls, basically, you have to go clockwise through the waterfall area, I've shown that in the video too.
Once you reach the room, Anubys will swoop down as you approach the center, dispatch it as you would any other bat enemy and the trophy is yours!
