HOW TO PREPARE MATE THE TRADITIONAL WAY

• Heat up the water and bring it to a simmer (around 170-180 degrees Fahrenheit).
• While the water heats up, fill ¾ of the gourd with Yerba Mate.
• Cover the top of the Mate gourd with the palm of your hand, turn it over while covering and give it a light shake. This step helps mixing & blending all the properties of the Yerba together.
• Tap the Yerba Mate to one side of the gourd to create a 45° little slope on one side.
• Add a little bit of cold water into the center of the Yerba to hydrate it.
• Place the bombilla into the Mate until the filter touches the bottom and the bombilla itself rests on the border of the gourd.
• At this point, the water should be heated. Transfer it into a thermos.
• For a sweeter, less bitter taste, you can add a sweetener of your choice, either to the Yerba within the gourd or to the water in the thermos.
• Pour hot (not boiling) water, aiming near the bombilla that is placed in the center of the Yerba.

Remember to always moisten your Yerba Mate with cool water before infusing with hot water. This will protect the flavor and nutrients. Avoid Boiling Water! It burns all the nutrients and makes the Yerba Mate taste bitter. Simmering water (between 170-180 degrees Fahrenheit) is ideal.
