Crab Stuffed Flounder

1 butterflied flounder, deboned
4 stalks celery
1 green bell pepper
1 sweet onion
2 garlic cloves
1/4 cup pickled jalapeños
1 stick butter
3 T vinegar, any kind
2 T fresh chopped parsley
3/4 cup cooked crab
Tony Chachere’s
Salt & pepper

In a food processor chop celery, onion, bell pepper, garlic, and jalapeños.

To a large skillet add stick of butter and 1 T olive oil. Stir in chopped veggies and cook over low until tender, stirring occasionally.

Season fish with Tony’s, salt, pepper, and a drizzle of olive oil.

Once veggies are cooked, turn off heat, stir in parsley, vinegar, and breadcrumbs. Then gently stir in crab.

Stuff fish on bottom layer with stuffing and fold over top layer of skin.

Season fish all over with Tony’s. Bake 350 for 25 minutes.
