Authentic Chicken Biryani Recipe
Ingredients:
• 500g chicken (with bone)
• 2 cups basmati rice
• 1 cup yogurt
• 2 onions (sliced)
• 2 tomatoes (chopped)
• 2 tbsp ginger garlic paste
• 4 green chilies (slit)
• Fresh coriander & mint leaves
• Whole spices (bay leaf, cinnamon, cloves, cardamom)
• 1 tsp turmeric, 1 tsp red chili powder, 2 tsp garam masala
• Saffron soaked in warm milk
• Ghee & oil
• Salt to taste
Method:
1. Marinate chicken with yogurt, ginger garlic paste, turmeric, red chili powder, garam masala & salt. Rest 1 hour.
2. Fry onions till golden brown. Remove half for garnishing.
3. Add whole spices, green chilies, tomatoes & marinated chicken. Cook till chicken is 80% done.
4. Boil rice till 70% cooked, drain.
5. Layer chicken and rice. Sprinkle fried onions, mint, coriander, saffron milk & ghee.
6. Cover and cook on low flame (dum) for 20–25 minutes.
Serve hot with raita!
