EGGLESS CHRISTMAS PLUM CAKE / EGGLESS CHRISTMAS FRUIT CAKE / NO RUM NO EGGS FRUIT AND NUT CAKE RECIPE .

Hi friends, This is Prerna and I welcome you to my channel Prerna Quick Ideas. Christmas Plum cake is a classic Christmas dessert. I have made it #Eggless and without rum and it tastes so good!


INGREDIENTS & PROCEDURE:


PART-1 SOAKING DRY FRUITS AND NUTS

Golden raisins
Almond
Cashew
Dried figs
Dried apricots
Golden dates
Black dates
Winter melon murabba
Red glazed cherries
Tutti frutti cherries
1/2 glass orange juice ( Can also use alcohol instead of juice)
Cut and soak dry fruits & cherries in orange juice for 2 hours.



PART-2 DRY INGREDIENTS

Flour- 1& 1/2 cup
Baking powder- 1 tsp
Baking soda-1/4 tsp
Cinnamon powder- 1 tbsp



PART-3 WET INGREDIENTS

Butter milk (1/2 cup milk+1 tbsp vinegar)
Oil- 1/2 cup
Jaggery powder-1 cup / Sugar-1/4 cup
Oranhe zest- 1/4 tsp
Vanilla essence-1 tsp



PROCEDURE-

Mix fruits and flour mixture together (after straining the juice and mix flour into to avoid sinking to bottom of the cake) and then incorporate with wet mixture. Brush the baking container with butter/oil and baking sheet and tap the container after transferring the batter to avoidair bubbles formed.



BAKING TIME & TEMP:-

In oven - Preheat the cake at 150°and Bake at 150° for 1 hrs 30 mins.
Without oven - Preheat the kadhai/Pan/Cooker for 5 mins at medium flame. Place the cake in kadhai/Pan on a stand and properly covered with a lid at low flame for 60 mins.

TIP OF THE DAY- Always use aluminium tins for baking cake in kadhai/Pan/Cooker. If baking in oven/OTG then you can use glass container apart from aluminum baking tins.
