Double boiler infused oil with herbalist jim mcdonald

Infusing st. john’s wort flowering tops in a double boiler (with some good prog rock playing in the background)... To be clearer than I was while talking, I usually leave the double boiler uncovered (unless I'm cooking next to it) for the first 3-5 days so the water that's evaporating out of the herbs can freely escape. Then I'll put the lid on overnight and look for condensation. If its there, I'll leave it uncovered the next day and then cover again over night, repeating this till there's no condensation.
