𝗙𝗼𝗿 𝐒𝐚𝐦𝐛𝐡𝐚𝐫:
Drumstick(सहजन की फली) - 4-5 Pieces
Soaked Pigeon Pea(दाल) - 1/2 Bowl
Oil(तेल) - Some
Cumin (जीरा) - 1/2 tsp
Bottle Gourd/Ghiya/Doodhi(लौकी) - Some
Carrot(गाजर) - 1
Salt(नमक) - Some
Turmeric Powder(हल्दी पाउडर) - Some
Water(पानी) - 2 Glass
Oil(तेल) - Some
Cumin(जीरा) - 1/2 tsp
Asafetida(हींग)
Curry leaves(करी पत्ता)
Green Chili (हरी मिर्च)
Tomatoes(टमाटर) - 1
Ginger(अदरक) - Grated
Salt(नमक) - Some
Red Chili Powder(लाल मिर्च पाउडर)
Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर)
Coriander Powder(धनिया पाउडर) - 1 Tsp
Water(पानी)
Sambhar Masala(सांभर मसाला) - 1 Tbsp
Jaggery(गुड़) - 2 pieces
Tamarind Pulp(इमली का गूदा) - Some

𝗙𝗼𝗿 𝗜𝗱𝗶𝘆𝗮𝗽𝗽𝗮𝗺:
𝟭𝘀𝘁 𝗠𝗲𝘁𝗵𝗼𝗱:
Rice Flour(चावल का आटा) - 1 Bowl
Hot Water(गर्म पानी)- 1 Cup
Salt(नमक) - Some
Ghee(घी) - 1 Tsp
Oil(तेल) - For Greasing
Hot Water(गर्म पानी)
Chili Flacks(चिली फ्लेक्स) - Some
Curry Leaves(करी पत्ता)

𝟮𝗻𝗱 𝗠𝗲𝘁𝗵𝗼𝗱:
Rice Flour(चावल का आटा) - 1 Cup
Hot Water(गर्म पानी) - 1.5 Cup
Refined Oil(तेल) - For Greasing

𝗙𝗼𝗿 𝗖𝗵𝘂𝘁𝗻𝗲𝘆:
Oil(तेल) - Some
Peanut(मूंगफली) - 1/4 Bowl
Ginger(अदरक) - 1 Inch
Green Chili(हरी मिर्च) - 4-5
Tamarind(इमली) - Small Piece
Roasted Gram(भुना चना) - 1/4 Bowl
Fresh Coconut(ताजा नारियल) - 1/2 Bowl
Salt(नमक) - Some
Water(पानी) - As Required

𝗙𝗼𝗿 𝗧𝗮𝗱𝗸𝗮:
Oil(तेल) - Some
Mustard seeds(राई दाना) - Some
Asafoetida(हींग) - Some
Urad Dal(उड़द दाल) - 1/2 Tsp
Curry Leaves(कड़ी पत्ता) - Some
Dry red Chili(सूखी लाल मिर्च) - 2

✍🏻𝐑𝐄𝐂𝐈𝐏𝐄:
𝗙𝗼𝗿 𝐒𝐚𝐦𝐛𝐡𝐚𝐫, keep the cooker for heating, put Oil, Cumin Seeds, chopped Bottle Gourd, Carrot, Salt to taste, Turmeric Powder, soaked Toor Dal & Water. Cover with lid & give it 2-3 whistles. Then release the pressure & mash with the masher.
Take another pan & put Oil, Cumin Seeds, Asafoetida, Curry Leaves, chopped Tomato, Green Chilli, grated Ginger, Salt, Red Chili Powder, Kashmiri Red Chilli Powder, Coriander Powder, Turmeric Powder & chopped Drumstick. Add some Water, cover & cook well. Then add Sambar Masala, Jaggery, Mango Pulp, mashed Dal & Water. Cover & cook on a medium flame for 10 minutes.
𝗙𝗼𝗿 𝗖𝗵𝘂𝘁𝗻𝗲𝘆, take a pan, put Oil, Peanut, Green Chilli, Ginger, Tamarind piece, roasted Gram, Fresh Coconut & Coriander Leaves. Roast all well & take them out into a mixer jar then put Water & Some Salt. Grind well & take it out.
For Tadka, take a pan, put Oil, Asafoetida, Mustard Seeds, Urad Dal, Curry Leaves, and Dry Red Chili. Give the tadka to the chutney & Chutney is ready to serve.
𝗙𝗼𝗿 𝗜𝗱𝗶𝘆𝗮𝗽𝗽𝗮𝗺 - 𝟭𝘀𝘁 𝗠𝗲𝘁𝗵𝗼𝗱, keep the pan for heating, put Rice Flour & dry roast it well for 3-4 minutes. Then take out the roasted Rice Flour in a bowl, add some Salt & pour the Hot Water & bind the dough. Then put some Ghee & knead the dough well. Cover it & give it rest.
Apply oil to the idiyappam machine & fill the prepared dough. Apply oil on the idiyappam plates & make Idiyappam & steam for 10-12 minutes. Garnish with Chilli Flakes & Curry Leaves.
𝟮𝗻𝗱 𝗠𝗲𝘁𝗵𝗼𝗱, take some Rice Flour Dough & make rolls from it. Then steam them for 10-12 minutes. Apply oil to the idiyappam machine & fill the steamed rolls & make Idiyappam on a Banana Leaf. Serve the idiyappam with Sambhar & Chutney.
