大家家里有吃西瓜皮的习惯吗?小时候我家是没有的,所以后来听人说吃西瓜皮的时候整个人都震惊了,但自己试了之后才知道真香~今天我用西瓜皮做了——油泼瓜皮、酱西瓜皮、西瓜皮炒肉丝、西瓜皮糊塌子、西瓜皮盒子,每一种都是清香爽脆的夏日美味!

▋食材Ingredients

★油泼瓜皮watermelon rind

西瓜皮250g,250g watermelon rind

生抽1大勺,1 tbsp light soy sauce

醋1小勺,1 tsp vinegar

辣椒面1/2小勺,1/2 tsp crushed dried chili

花椒粉1小撮,pinch of szechwan pepper powder

糖1/2小勺,1/2 tsp sugar

白胡椒1小撮,pinch of white pepper

油2大勺,2 tbsp oil

蒜头1瓣,a clove of garlic

香菜,coriander


★西瓜皮炒肉丝Fried pork tenderloin with watermelon rind

西瓜皮400g,400g watermelon rind

里脊200g,200g pork tenderloin

青红椒各1个,one green chili and one red chili

生抽2大勺,2 tbsp light soy sauce

黄酒1大勺,1 tbsp shaoxing rice wine

白胡椒1小撮,pinch of white pepper

玉米淀粉2小勺,2 tsp corn starch

蒜头1瓣,a clove of garlic

盐1小撮,pinch of salt

糖1小撮,pinch of sugar

香油几滴,few drops of sesame oil


★西瓜皮糊塌子watermelon rind pancakes

西瓜皮400g,400g watermelon rind

胡萝卜1/2根,1/2 carrot

盐1.5小勺,1.5 tsp salt

鸡蛋2个,2 eggs

面粉140g,purpose flour

葱3根,3 green onion

白胡椒1小撮,pinch of white pepper

花椒粉1小撮,pinch of szechwan pepper powder


★酱西瓜皮Marinated watermelon rind

西瓜皮300g,300g watermelon rind

生抽3大勺,3 tbsp light soy sauce

糖20g,20g sugar

蒜头5个,5 cloves of garlic

花椒1小勺,1 tsp szechwan pepper

八角2个,2 star anise

小米辣2个,2 bird-eye chilli

水50ml,50ml water

油1大勺,1 tbsp oil


★西瓜皮盒子Chinese pasty watermelon rind & egg filling

西瓜皮500g,500g watermelon rind

粉丝50g,50g glass noodles

鸡蛋2个,2 eggs

虾皮/xo酱1大勺,1 tbsp dried small shrimps / XO sauce

糖1/2小勺,1/2 tsp sugar

白胡椒1小撮,pinch of white pepper

蚝油1.5大勺,1.5 tbsp oyster sauce

花椒粉,szechwan pepper powder

香油2小勺,2 tsp sesame oil

盐1小勺,1 tsp salt

面粉180g,180g purpose flour

盐1小撮,pinch of salt

60-70度热水90ml,90ml 60 to 70℃ hot water
