It’s raining and everyone is craving Chai with Pakoras . Now, Masala Chai needs no introduction . One of the most popular teas that just wakes up one’s senses. I am pleased to introduce Deepali, who has been my help for the last eight plus years. She has always been a great support, helping, observing and appreciating the efforts I put in to share recipes with you all . We often have interesting mutual sharings/discussions about how few vegetables/dishes are cooked. One such discussion about Masala Chai led to her sharing about her way of making Masala Chai using whole spices I thought it would be a nice idea if she shares it with you all too. Though she was shy, she came out of her comfort zone/ in front of the camera to share the recipe. Thank you Deepali. Hope it is useful and you make this strong cup of Masala Chai for yourself and your family.

Important Notes: Use the chai cups you are going to serve chai to measure milk and water. This chai has equal amounts of milk and water proportion. Wait for the masala and tea to flavour the water before you add milk. Add sugar after the first boil and switch off after the second.

Masala Chai :

1 cup water
1 cup milk
1/2” ginger (freshly grated)
1/2” cinnamon stick
2 cloves
2 green cardamom ( coarsely powdered)
4 black peppercorns
sugar as per taste
