Malvani Egg Curry | Simple & Easy Egg Curry | Malvani Anda Curry | मालवणी अंड्याचा रस्सा | Egg Curry Recipe

Malvani Anda Curry Recipe is a flavour packed spicy curry, made Malvani style. Malvani cuisine is known for its spicy, tart non vegetarian delicacies. Malvani masala is almost a core ingredient that is used in most recipes from that region of Maharashtra. It is also popularly included in rich and luscious egg curry, Malvani-style. It is a flavoursome dish that gives a spicy-and-tangy twist to a regular egg curry recipe.

So here's the recipe from my kitchen to yours.

Ingredients :

6 nos. Boiled Eggs (slits given on each side)

For the Masala Paste :

½ cup (25 gms) Dry Coconut (copra)
2 tbsp Vegetable Oil
1 large (150 gms) Onion (sliced)
10 to 12 nos. (15 gms) Garlic Cloves
1 inch (10 gms) Ginger (roughly chopped)
2 nos Green Chillies
4 to 5 sprigs (a handful)
50 ml Water

Ingredients for Roasting the Boiled Eggs :

1 tbsp Vegetable Oil
½ tsp Turmeric Powder
½ tsp Red Chilli Powder
¼ tsp Salt (or as per taste)

For the Gravy :

3 to 4 nos. Cloves (lavang)
2 nos Green Cardamoms (Hara Elaichi)
2 small sticks Cinnamon (Dalchini)
1 small (75 gms) Onion (finely chopped)
2 medium size (150 gms) Tomatoes (finely chopped)
½ tsp Turmeric Powder
1 tbsp Kashmiri Red Chilli Powder
1 tbsp Malwani Masala Powder (or can use Garam Masala Powder)
½ tsp Salt (or as per taste)
200 ml Water (or as per your consistency)
3 sprigs Coriander Leaves (finely chopped)

Note : tsp is teaspoon
tbsp is tablespoon
