This dish is a traditional dish prepared in almost all part of south India. This is excellent recipe which is rich in iron content and has very simple step in preparation. This ukkali’s preparation method is almost same in all the regional in south India but, according the regional food availability extra ingredient is added to enhance the taste of dish. For example, in some part of tamilnadu channa dal is added and, in some part, urad dal is added similarly it may vary to region to region. This ukkali is similar to rice halwa made using jaggery as sweeting agent. The ukkali’s key ingredient is rice and jaggery,but as I said before addition of extra item not only vary from region to region, but it also vary fro which occasion it is prepared. When ukkali is prepared in marriage dal like moong dal or channa dal is added along with rice, but when it is prepared specially for ladies function it is prepared with urad dal and sesame oil. This traditional recipe though has long history its preparation step is very simple.This is an excellent snack for kids.

1, Parboiled rice {tiffen rice} 1 cup
2, Jaggery 1 to 1.5 cup
3, Ghee 3 tsp
4, Cardamom 3 nos
5, Cashew & Raisin as required
