WRITTEN RECIPE

Hainanese Chicken
1 whole chicken
6 slices ginger
2 whole green onion, chopped
1/4 cup Shaoxing wine
1 tbsp salt
2 tsp sesame oil
1 tsp soy sauce

Ramen Broth
1 cup dashi
2 cups reserved chicken stock (from simmering the chicken)
(can do more than these measurements, just keep the 1:2 ratio)

Ramen Eggs
4-6 large eggs
1/4 cup soy saucce
1/4 cup mirin
1/4 cup sake (water is fine)
1 tbsp sugar

Toppings
1 package uncooked ramen noodles
4 red chili peppers
1 tsp chili oil
Green onions, finely chopped
Seaweed sheets
Parsley with stem attached

DIRECTIONS

Hainanese Chicken
In a large pot, fill with water and bring to a boil
Add ginger, onions, Shaoxing wine, salt
Place chicken in, breast side up. Make sure the breasts are not submerged in the water
Add a bit more water to fill pot if necessary
Cover and simmer on low heat for 40 minutes
Turn off the heat and flip chicken over so breasts are fully submerged in water
Leave in pot for 15 minutes to allow residual heat to finish cooking chicken
Remove chicken from pot and brush with sesame oil/soy sauce mixture
Reserve chicken stock for the ramen broth

Ramen Broth
In a large pot, combine dashi and chicken stock. Keep 1:2 ratio
Add salt if necessary after tasting
Leave on a low simmer until ready to serve

Ramen Eggs
Carefully place large eggs in a pot of boiling water
Boil for 7-8 minutes
Dunk into ice bath to stop cooking process
Peel eggs when cooled and place into a container
In a small saucepan, add soy sauce, mirin, sake, sugar. Over medium low heat, stir until all sugar is dissolved
Pour marinade over eggs
Place paper towel over eggs then cover the container
Leave in fridge overnight

Toppings
Remove seeds and pith of chili peppers if you want reduced heat
Cook ramen noodles according to package instructions
Carve chicken and then slice the breast into 5 thick slices

Assembly
In a bowl, start with ladle of tare (ramen seasoning), then a few ladles of ramen broth
Add cooked ramen noodles, then sliced chicken breast, ramen egg, red chili peppers, chili oil, seaweed sheets, and parsley
