Easy Loaded Baked Potato Soup

This baked potato soup is very creamy even though it contains no heavy cream. I used whole milk, some flour to thicken it, and sour cream for taste and a lovely, velvety texture. I diced the potatoes into half-inch cubes and they cooked quickly in the pot in around 30 minutes. So easy!

1 cup chicken broth
2 cloves garlic, minced
3/4 cup grated cheddar cheese (or more) plus more to garnish
3/4 cup sour cream
Scallions chopped, to garnish
Salt & pepper, to taste
