Mid autumn festival special: Swiss chicken

Mid autumn festival is coming. Make a chicken for celebration, which is easy but yummy.

中秋節精選,瑞士雞

材料:
冰鮮雞1隻
瑞士汁2支
片糖2磚
玫瑰露酒

處理/程序:
1. 雞,除去雞膏及內臟,切出雙腳。
2. 雞,加入粗鹽1湯匙,乸5分鐘,去除雪味、腥味及加入少許鹹味。
3. 雞,清水沖洗乾淨。
4. 大火煲滾1煲水,熄火,放雞落煲。
5. 預備大量冰水。
6. 放雞入冰水。
7. 洗乾淨煲。
8. 在煲內加入瑞士汁,加入:
a. 清水2支
b. 片糖2磚
c. 老抽3湯匙
大火滾起。
9. 瑞士汁差不多滾起,取出雞,擎乾水,放入瑞士汁內,熄火,浸30分鐘,同時加入雞腳。
10. 最慢火,半掩煲蓋,大約浸雞45分鐘。
11. 轉最大火,加入玫瑰露酒1湯匙,滾起,冚蓋,熄火,焗5分鐘。
12. 取出雞,放上碟,淋上玫瑰露酒2湯匙。
13. 雞,已攤凍,切件,淋上老抽3湯匙。
14. 完成,可享用。

Mid autumn festival special: Swiss chicken

Ingredients:
Frozen chicken 1 No.
All purpose marinade 2 bottles
Slab sugar 2 pcs
Rose liqueur

Preparation:
1. The chicken, remove fat and intestines. Cut the feet.
2. The chicken, add in 1 tbsp of cooking salt, season for 5 minutes, to remove unpleasant smells and add some salty tastes to it.
3. The chicken, rinse thoroughly.
4. Heat up a pot of water at high flame. Turn off fire. Put chicken in pot.
5. Get ready for iced water.
6. Put chicken in the iced water.
7. Rinse the pot.
8. Put the marinade into the pot, add in:
a. Water 2 bottles
b. Slab sugar 2 pcs
c. Dark soya sauce 3 tbsp
Heat up at high flame.
9. The marinade has been almost boiled up, take out the chicken. Drain. Put it into the marinade. Turn off fire. Soak for 30 minutes. Add in the feet at the same time.
10. The lowest flame, halfly cover up the pot. Soak the chicken for 45 minutes.
11. Turn to the highest flame. Add in 1 tbsp of rose liqueur. Boil it up. Cover up the pot. Turn off fire. Leave it for 5 minutes.
12. Take out the chicken, put on plate. Pour 2 tbsp of rose liqueur on top.
13. The chicken, has been cooled down. Cut in pieces. Pour 3 tbsp of dark soya sauce on top.
14. Complete. Serve.
