Did you know that there are noodles in Persian cuisine? I didn't know that either!

Ash reshteh is a Persian herb, legume and noodle stew that is SUPER THICK AF and super satisfying. Its often served as an appetizer and at Nowruz (Persian New Year) and is very easy to make. It's such a great way to use up a lot of those bunches of fresh herbs that you might've forgotten in the fridge - you know what I'm talking about! It's also a VEGAN-friendly dish as well if you don't use kashk! Super yum, what are you waiting for?

Ingredients you'll need:

Soup
4 tbsp vegetable oil
1 small onion, diced
1/3 cup dried fancy green lentils/French Puy lentils, soaked overnight
1/3 cup dried chickpeas, soaked overnight
1 bunch scallions, sliced thinly (whites separated from the green parts)
1 bunch dill, roughly chopped
1 bunch Italian flat-leaf parsley, roughly chopped
1 bunch mint, roughly chopped
1 bunch cilantro, roughly chopped
1 bunch spinach, roughly chopped
2 tbsp ground turmeric
2 quarts homemade vegetable stock
1 (540ml) can red kidney beans, drained and rinsed
3 heaping tbsp all-purpose flour
100g Reshteh noodles, broken in half

Garnish
4 tbsp vegetable oil
1 large white onion, thinly sliced
3 tbsp vegetable oil
4 tbsp dried mint
kashk, as needed
