Highway koyla karahi
Ingredients
Oil 1 cup
Chicken 1 kg 20 pcs
Salt 1 ½ tsp
Ginger garlic paste 2 tbsp
Crushed black pepper 1 ½ tsp
Turmeric ½ tsp
Roasted /crushed coriander 2 tsp heaped
Roasted and crushed cumin 2 tsp
All spice powder 1 tsp
Ginger julienne 2 tbsp
Tomato ½ kg
Ajwain ¼ tsp
Yogurt ½ cup
Green chilies 8 sliced
Crushed red pepper 2 tsp
Onion chopped 1 cup
Coriander leaves ½ cup
Kasuri methi 1 tbsp
Method
Heat oil, sauté onion till light pink, add chicken with ginger garlic paste, fry for 10 mins, add blanched and chopped tomatoes with all seasonings, cover and cook for 15 mins, add yogurt, cover and cook for 10 mins, now add roasted coriander, cumin, green chilies, ginger julienne and kasuri methi, give dum of coal and enjoy.

Buffalo chicken nuggets
Ingredients
chicken breast 2
Bread crumbs 1 cup
Parmesan cheese ½ cup
Italian herbs 1 tsp
Salt 1 tsp
Hot sauce 1 cup
Butter ½ cup melted
Method
In a bowl mix together bread crumbs, parmesan cheese, italian herbs and salt, keep aside. In another bowl mix hot sauce and melted butter, now put cubes of chicken in hot sauce, leave it to soak for 10 mins then spread in bread crumbs mixture twice, and deep fry or you can bake in a greased pan. Serve with 1000 island dressing.

Achari eema
Ingredients
Mince ½ kg
Salt 1 tsp
Turmeric ¼ tsp
Chopped onion 1
Ginger garlic paste 1 tsp
Achari masala 3 tbsp
Yogurt 1 cup
Green chilies 10
Ginger sliced 2 tbsp
Coriander leaves 2 tbsp
Method
Marinate mince with 1 cup yogurt, salt, turmeric, achar masala, keep aside for 30 minutes, heat oil fry chopped onion till light golden add ginger garlic paste with marinated mutton, cover and cook on low flame when water dries add green chilies, coriander leaves, leave it on dum till oil floats on top, serve garnish with ginger slice and coriander leaves.
