Ingredients (6-inch round mould)

Biscoff cookies (or any other you like) 100g
Butter (melted) 40g

Cream cheese (room temperature) 250g
Sugar 50g
Sour cream 150g
Eggs 2
Lemon juice 20ml
Gin (optional) 10ml
Vanilla paste 3g
Heavy cream 150ml

Bake in a hot water bath at a preheated 180℃ oven for 20 minutes, then lower the temperature to 150℃ and bake for another 25-30 minutes. Leave in the oven for 1 hour then refrigerate overnight.
