Chicken Feet Bone Broth:

Recipe:
1-1½ gallons chicken bone broth (or favorite chicken broth)
3 stocks lemongrass
1 thumb size piece (about 1.5 oz) galangal - can substitute ginger
1 small piece turmeric (about ½-1 oz)
4-5 kaffir lime leaves (can substitute the zest of 1 large lime)
2-3 tbsp minced garlic (if broth doesn’t have garlic already)
2-3 large carrots
2 large shallots (can substitute onions)
8-12 baby corn
2-3 bunches bok choy
1 large bunch of enoki mushrooms
3 chicken breasts or use thighs/drumsticks
3-4 ounces rice noodles

Toppings:
1-3 limes
1 large bunch cilantro
3-10 birds eye chilies


Instructions:
1. Add broth to a pot on medium high heat, add lemongrass, galangal, turmeric, and lime leaves, bring to a simmer and cook for about 10-15 minutes
2. Add chopped carrots, shallots, corn, and diced chicken to the broth, allow to simmer for 10-12 minutes
3. Optional step: after simmering a total of 20 minutes, remove the lemongrass, galangal, turmeric, and lime leaves and discard. These can remain in the soup, but they’re not really meant to be consumed
4. Add the bok choy, mushrooms, and rice noodles, cook 5 minutes longer or until done to your liking
5. Taste and adjust seasoning before serving
6. Cut limes into wedges and remove seeds, chop cilantro, and dice chilies, serve along side soup
