Mary Berry's 'Floating islands with spun sugar' was the third technical challenge in The Great British Bake Off (GBBO) Season 4. This is a classy, dreamy dessert of poached meringues floating on a sea of creamy custard, decorated with a ball of spun sugar.

I was so inspired by GBBO that I wanted to try all the technical challenge recipes.

[Mel] Here we all are, technical challenge time. Just to let you know, this is one of Mary's recipes. We don't want them to find out what you're doing, so, Paul and Mary, please leave.
[Sue] So, for today's challenge, we would like you to make iles flottantes, or floating islands,
which are, of course, little tiny poached meringues, light and fluffy, in a sea of creme anglaise
and topped with spun sugar. You have an hour-and-a-half to make these

Ingredients

For the crème anglaise:
1. Whole milk - 300ml or 10½fl oz
2. Double cream - 300ml or 10½fl oz
3. Vanilla bean paste - 1 tsp
4. 6free-range eggs, yolks only - 6
5. Caster sugar - 100 grams or 3½oz

For the meringues:
1. Free-range eggs, whites only - 6
2. Caster sugar - 150 grams or 5½oz

For the spun sugar:
1. Caster sugar - 100 grams or 3½oz
