What does "Fresh" seafood really mean? In the United States all it means is that it's not frozen. The unfortunate reality is that your grocery store fish can be weeks old by the time you buy it under the glass retail. This is largely due to the seafood system in the United States which makes it difficult for customers to buy straight from the source, but it's also because most people just have no clue. The vast majority of the seafood available for sale at the grocery store is not local, with anywhere from 60-80% of seafood in the US imported from abroad. But there are people changing the trend and going against the majority.
