Friends, today I am sharing "Dara Nu Athanu Recipe" / ડારાનું અથાણું / डारा का आचार. Many of you may not be knowing about Dara and the Achar made from it. Dara are basically stems of plant and the Athanu is made from stems itself.

This Athanu is popular among people of villages and towns located at western sea coast of Gujarat. You can find Dara stems easily in vegetable market of Porbandar during April-May every year.

The notable thing about this Athanu is that, it is made without using Oil. Hence, it is oilless athanu aka achar.

The process of making this Dara Nu Athanu is very simple, however preparation of Dara is a bit trickly. I showed here in this video two methods of making this Dara Nu Athanu.

INGREDIENTS:
TRADITIONAL DARA ACHAR
500 grams Dara (डारा)
Half cup Turmeric Salted Raw Mango Extract
नमक हल्दी मिलाए हुए कच्चे आम का आधा कप खट्टा पानी
Water as required (पानी)
1.25 tsp Salt (नमक)
½ tsp Turmeric Powder (हल्दी पावडर)

MUSTARD COATED DARA ACHAR
⅛ cup Split Mustard Seeds (राय का कुरिया)
½ tsp Salt (नमक)
¼ tsp Turmeric Powder (हल्दी पावडर)
Lemon (निम्बू)
