Germany’s state visitors are often presented with a barrel filled of pickled herring – a symbol of hospitality. Traditionally, German herring that’s been pickled in vinegar is known as ‘Bismarck herring’, after the former German Imperial Chancellor, Otto von Bismarck. What does the chancellor of old have to do with pickled fish, though? To find out, DW Food expert Felicitas Then went to Stralsund, northern Germany.
