Ingredients To Make Delicious Homemade Pozole From Scratch NO Canned pozole used!

What you need to make the nixtamalization:
1 big tablespoon hydrated lime
8lbs of Maíz
2 gal water
Cook for about 55min to an hour

Now to cook the pozole
8lbs of pre-cooked nixtamal
6gal water
3 garlic heads
1 big onion
Then cook for 6 hours
But halfway cooking the pozole about 3 hours in add the rest of the seasonings
3 bay leafs
5 cloves
10 whole black pepper
1 1/2 tablespoon of oregano
Salt to your taste
*TIP*: my mom blended the onion and garlic from the pozole at the end when it was ready and then she added back into the hominy just so when people eat it, they don’t grab a piece of garlic or onion 😅

Meats
They are both cooked the same way either pork or chicken
Cook your 6lb of pork and 2 whole chickens (sliced) in separate pots of course then add in these seasonings
5 Bay leaf
6 cloves
Dash of Oregano
10 Whole black pepper
2 garlic cloves
1 whole onion
Cook for 2 hours or until soften and same with the chicken
In the video, I only show you how to cook the pork

To make the Chile Guajillo sauce
1lbs of Chile Guajillo no seeds (so children can eat)
Water enough to cover all the Chile guajillo so it can be softened to then blend
2 garlic heads
1 whole onion
4 Cloves
1/2 tbsp Cumin
6 whole black pepper
Dash of oregano
Blend the sauce once it has already softened (Chile Guajillo) for about 30 minutes
