Moringa leaves stir-fry, also known as "Thoran," is a nutritious and flavorful dish made with fresh moringa (drumstick) leaves. The recipe typically includes ingredients such as grated coconut, turmeric powder (optional), salt, and oil. To prepare the dish, the moringa leaves are washed thoroughly and then stir-fried with the other ingredients until tender. 🥣Ingredients
2 cups fresh moringa leaves, washed and plucked from stems
1 tablespoon oil (coconut oil or any cooking oil of your choice)
1/2 cup grated coconut
1/2 tsp mustard seeds
1tsp Urad dal/black gram
1 Dried red chilli
8-10 curry leaves
2 cloves garlic, chopped
1 small onion, finely chopped
1 green chili, slit lengthwise (optional)
1/4 teaspoon turmeric powder
1/4 tsp chilli powder
Salt to taste

🧑‍🍳Cooking tips:-
❗Add 1/2 tsp jaggery (optional- to balance the flavor).
❗Covering the pan while cooking the Moringa Leaves Stir Fry is optional. Some people prefer to cover the pan to retain moisture and cook the leaves more quickly, while others prefer to leave it uncovered to allow excess moisture to evaporate and achieve a slightly crispy texture.
❗You can replace coconut with roasted and crushed peanuts.
