Hi guys, this is Shikha sharda, name behind ‘the excited cook and traveller.’ I love to cook and travel, and, I would love to share my knowledge and experience along the way.

My today’s recipe is ‘Dahi bhalla / Dahi vada’, Whatever you Call it. It is very famous snack, particularly in Delhi and Punjab. The taste and texture of Dahi Bhalla is quite versatile as there are varied elements that go into it. You can keep it simple with dahi and chutneys, or you can add boiled potatoes or black boiled chana or even our own pomegranate. Just play with your choice of toppings and enjoy it chilled.

Ingredients-

2 cups urad dal, soaked
1 tsp grated ginger
3-4 green chillies, chopped
1 tsp cumin seeds
Salt to taste
Oil for frying
Luke warm water for first dip
One coal
Hing
Ghee
Luke warm water for second dip

Toppings-
Dahi with little sugar
Mint chutney
Tamarind chutney
Special dahi Bhalla masala
And sev.

Method-

1. Soak urad dal overnight
2. Grind into paste by adding 1-2 tsp cold water
3. If you find the consistency thick, you can adjust here by adding minimal cold water
4. Now mix the batter using your hand for good 8-10 mins. Note : rotate your hand in one direction only
5. Once fluffy, add ginger, chillies, cumin, and salt and mix well with light hands
6. Test the batter by putting it in a glass of water, If it starts floating, it’s good to go.
7. Set flame to medium and add pea size batter to Check if it comes out good
8. Now add in one batch, some 4-5 vadas at one time
9. Let it cook undisturbed for 1 min, then flip and cook it evenly from all sides, it will take some 4-5 mins
10. Take out all the vadas on a tissue paper and once they get cool down a bit, add them to a bowl of Luke warm water
11. Leave it for 6-7 mins
12. Take them out, squeezing a bit
13. Take a bowl, add burned coal, hing and 1/2 tsp ghee and close the bowl so that the smoke stay intact
14. Then uncover, and take out the coal and add in like warm water.
15. Dip the vadas for the second time for 10 mins
16. After 10 mins, take them out in a plate, after squeezing a bit, and top up with dahi, chutneys and your choice of toppings.
