This is a very popular homemade dish in Hungary, because it's quick, easy to make, delicious and last but not least very cheap. Hungarian dishes called „Paprikash” or „Pörkölt” can be made with chicken, beef, pork, lamb, mushroom and yes – with potatoes too.
If you prefer a vegetarian meal, you can skip the smoked lard and sausages – it still will be very good.

Ingredients (serves 4-6)

1.5 kilo (3 lbs) potatoes
2 medium yellow onions
1 tomato
1 pepper (yellow or green)
2 cloves of garlic
100 grams (3.5 oz) smoked lard (or 4-5 tbsp of vegetable oil)
200 grams (7 oz) smoked Hungarian type sausage (or use Chorizo)
2 tbsp paprika
1 tsp caraway seeds
salt and freshly ground black pepper
fresh bread and some pickles for serving

1. Prepare everything for the cooking:
2. Finely chop the onions, cut the tomato,paprika and garlic into pieces
3. Peel and cut the potatoes into (not too small) cubes, then wash them under cold running water
4. Cut the required piece from the smoked lard (if you use it), remove the skin, slice then chop it into small cubes
5. Slice the sausages
6. Put the lard cubes into a pot on medium heat and cook until the fat has released and the lard cubes are getting crisp.
7. Add the chopped onions and cook on low heat until is has softened.
8. Remove from the heat and add the paprika (it can become bitter if you add it to the pot while it's still on the heat). Stir together.
9. Put the pot back to the heat and add the potatoes. Stir, then add the chopped tomato, pepper and garlic. Season with caraway seeds, black pepper and salt. Stir again.
10. Pour over just enough water to cover the potatoes.
11. Cover the pot and cook on medium-low heat until the potatoes just half-cooked (you can check it with a fork)
12. Add the sausage slices, stir carefully (Try not to break the potatoes very much – a little bit is OK, it'll thicken the dish, but we want potato pieces in it, not mushed potatoes)
13. Cook on low heat, uncovered until the sausages are done (about 15 minutes) and the stew has tickened and not watery.
14. Remove from the heat and serve the Potato Paprikash with some slices of fresh bread and any kind of pickle you prefer.
