Ingredients:

3–4 medium potatoes / batata
Upvas Bhajani (or a mix of sabudana flour, varai flour, and rajgira flour)
Salt – to taste
Red chili powder – to taste
Peanut oil or ghee – for roasting

Method:

1. Prepare the potatoes

Peel the potatoes and grate them using the bigger side of the grater.
Always grate in one direction so the strands remain long, which helps in binding.
Use them immediately after grating, otherwise the potatoes may turn reddish.

2. Mix the ingredients

Add Upvas Bhajani. If you don’t have it, mix sabudana flour, varai flour, and rajgira flour.
Do not add too much—just enough to coat the potato lightly.
Add salt and red chili powder as per taste.
Mix well. The flour will absorb the water released from the potatoes.

3. Cook the pancake

Heat a non-stick pan and add 1–2 tablespoons of peanut oil or ghee.
Once hot, spread the potato mixture evenly on the pan.
Gently press it down with a spatula and cook on medium heat.
As it cooks, the starch from the potato will help the strands bind together into a thin, crispy pancake.

4. Flip and roast

When the bottom turns reddish brown and crisp, carefully flip it.
Drizzle a little oil on the edges and roast well on both sides.

5. Serve

Once cooked, remove onto a plate.
Repeat the process for the remaining mixture.
Serve hot with peanut chutney and curd, both perfect for fasting.
