Pasta salads can often be drenched in mayonnaise, taste off very quickly or become a soggy mess. In this video I show you how to remedy all of those pasta salad shortcomings through some simple technique and a pretty darn delicious recipe (if I do say so myself) .

Full ingredient amounts are in the video but if I'm being honest I mostly wing this sauce every time I make it. Feel free to substitute ingredients with some of your favourites and make this dish your own x

In the vinaigrette there's plenty of sundried tomatoes, olives, capers, olive oil, red wine vinegar, mustard, basil, mint, honey and parmesan. For a fully vegan situation you can easily omit the parm and honey though).

Thats the backbone of the dish, to the pasta I add roast peppers, black olives, persian cucumber, cherry tomatoes, red onion, more basil and mint as well as a handful of pine nuts I had elftover from another recipe. (most other nuts would be delish but pine nuts are excellent here).
