Chai syrup/tea concentrate is here! This is a kind of Starbucks copycat syrup recipe, my kids LOVE this one. One batch makes enough syrup for 13 8-ounce drinks.

HOMEMADE CHAI SYRUP/TEA CONCENTRATE

Ingredients
• 2 cups hot water (just boiled)
• 10 Tazo chai bags
• 1 ¼ cups unbleached sugar (or regular white sugar)
• ½ teaspoon cream of tartar
• 1 teaspoon vanilla extract
• ½ teaspoon ground cinnamon
• ½ teaspoon ground ginger
• ¼ teaspoon ground cloves
• ⅛ teaspoon cardamom

Instructions

1. Measure out 2 cups of water into a heat resistant bowl or large cup and steep 10 Tazo chai bags in the hot water for 15 minutes, occasionally stirring them to make sure they are steeping, but don't dunk them (this can result in bitterness).
2. After 15 minutes, squeeze them out and discard. You should end up with around 1 ½ cups of very strong chai (chai concentrate).
3. Add the freshly brewed chai concentrate to a small saucepan with 1 ¼ cups of sugar (we use Zulka unbleached sugar). Whisk in the cream of tartar.
4. Heat over medium to medium-low heat until lightly boiling, reduce the heat and simmer for 10 minutes, whisking occasionally.
5. Once the 10 minutes is up, remove from the heat and whisk in the vanilla and spices.
6. Allow to cool completely. Store in a jar at room temperature.
7. For drinks, use about 2 Tablespoons syrup for an 8 ounce drink. You can use 3 Tablespoons syrup for a stronger drink. Stir the syrup before using since the spices will settle at the bottom.

TO MAKE AN OATMILK CHAI LATTE
1. For an 8 ounce chai, mix together 2 Tablespoons of syrup, 4 ounces (1/2 cup) water, and 4 ounces (1/2 cup) of oatmilk.
2. Use hot water and hot oat milk for a hot drink, or cold water and cold oat milk for an iced drink with a few ice cubes.
3. Adjust the amount of syrup for larger drinks (like 12 to 16 ounces).

Notes
This chai syrup is moderately spiced, if you like your chai strong, you can use more syrup in your drink, double the spices in the syrup, or replace the water in your drink with brewed chai for a double-strength chai latte.
