This classic Sattu Paratha recipe is made with a spiced filling of roasted gram flour (sattu) mixed with fresh coriander, green chilies, onion, ginger, ajwain, and simple Indian spices, all stuffed inside soft whole wheat dough and roasted on a hot tawa with ghee until golden and crispy.

सत्तू का पराठा करण्यासाठी लागणारे साहित्य
• १ कप / १५० ग्रॅम सत्तूचं पीठ
• चवीनुसार मीठ
• १/२ चमचा ओवा
• १/२ चमचा बारीक चिरलेलं आलं
• १ बारीक चिरलेला कांदा
• ५~६ बारीक चिरलेल्या हिरव्या मिरच्या
• बारीक चिरलेली कोथिंबीर
• १ मोठा चमचा कैरीचं लोणचं
• १ मोठा चमचा मोहरीचं तेल
• जरुरीनुसार पाणी
• पोळीची भिजवलेली कणिक
• जरुरीनुसार साजूक तूप

Ingredients:
• 1 cup / 150 gm Sattu flour
• Salt to taste
• 1/2 tsp Ajwain / Carom seeds
• 1/2 tsp finely chopped Ginger
• 1 finely chopped Onion
• 5~6 finely chopped Green chilies
• Finely chopped Coriander leaves
• 1 tbsp Mango pickle
• 1 tbsp Mustard oil
• Water as needed
• Chapati dough
• Ghee as needed
Method:
• Mix sattu flour, salt, ajwain, ginger, onion, green chilies, coriander leaves, mango pickle and
mustard oil well together in a bowl and add a little water at a time to knead soft dough.
• Take small portion of the chapati dough and make it smooth and even.
• Rub dry flour on it and make a small disc with your hand.
• Make small ball of sattu dough and fill it in the chapati dough.
• Bring the edges together and seal it well.
• Remove excess dough if any and make the stuffed ball smooth and even.
• Sprinkale some dry flour on the rolling board and place the dough ball on it.
• Roll paratha from it, make sure the edges are not thick.
• Heat up a skillet on medium heat and when the skillet is hot enough, transfer the paratha on it.
• Roast the paratha on high heat for a while.
• When lower side is roasted a little, flip the paratha over and roast it a little on high heat from other
side as well.
• Now reduce the heat to medium and roast it well from both sides.
• Spread ghee on upper side and flip the paratha over.
• Roast it well from other side too.
• When the paratha is roasted well from both sides, take it off on a wire rack. Sattu ka paratha is
ready.
