Here's a classic recipe for Mutton Kacchi Biryani, a flavorful and aromatic dish that's sure to impress your guests:

Ingredients:

For marinating the mutton:

1 kg mutton, preferably with bones, cut into pieces
1 cup yogurt
2 tablespoons ginger-garlic paste
1 tablespoon red chili powder
1 teaspoon turmeric powder
1 teaspoon garam masala powder
Salt to taste
Juice of 1 lemon
2 tablespoons oil
For the rice:

3 cups basmati rice, soaked for 30 minutes and drained
1 onion, thinly sliced
4-5 green chilies, slit lengthwise
2 tablespoons chopped mint leaves
2 tablespoons chopped coriander leaves
4-5 whole cloves
4-5 whole green cardamoms
2-inch cinnamon stick
1 bay leaf
Salt to taste
For assembling:

1 cup fried onions (birista)
1 cup warm milk
A pinch of saffron strands
Ghee for greasing the pot
Instructions:

In a large bowl, mix together the yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala powder, salt, lemon juice, and oil. Add the mutton pieces and coat them well with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

In a large pot, bring water to a boil. Add the soaked and drained rice along with the whole spices (cloves, cardamoms, cinnamon stick, bay leaf), sliced onion, green chilies, mint leaves, coriander leaves, and salt. Cook the rice until it's 70-80% done. Drain the rice and set aside.

Preheat the oven to 350°F (180°C).

Grease a heavy-bottomed oven-safe pot with ghee. Spread a layer of marinated mutton at the bottom of the pot.

Spread a layer of partially cooked rice over the mutton layer. Sprinkle some fried onions (birista) on top.

Continue layering with the remaining mutton and rice, finishing with a layer of rice on top. Sprinkle the remaining fried onions on top.

Warm the milk and dissolve the saffron strands in it. Pour the saffron-infused milk evenly over the rice.

Cover the pot tightly with aluminum foil or a lid to seal in the flavors. Place the pot in the preheated oven and bake for 45-50 minutes.

Once done, remove the pot from the oven and let it rest for 10-15 minutes.

Gently fluff up the biryani with a fork, mixing the layers slightly. Serve hot with raita, salad, and your favorite condiments.
