Happy Birthday Noel | The Shirogane

I made a cocktail based on our favorite muki muki Danchou Shirogane Noel! Her birthday is on November 24. Happy birthday Noel! This one is for you!

This drink is based on a cobbler cocktail. Here is the recipe:

Yuzu Earl Grey Foam:
3 oz yuzu liqueur
2 oz strong brewed earl grey tea
2 egg whites

Mix ingredients in a whipped cream dispenser and charge with nitrous oxide cartridge. Shake very well.

Cocktail:
0.75 oz (22.5 ml) simple syrup
0.75 oz (22.5 ml) fresh lime juice
0.75 oz (22.5 ml) Cocchi Americano
1.5 oz (45 ml) Noel's Potion Gin
2 dashes lemon bitters
2 drops of saline solution

Mix ingredients in a mixing glass. Pour 40% cocktail volume (1.5 oz) in whole milk into another glass. Pour cocktail over milk and combine. Filter cocktail over wet coffee filter and nut milk bag/cheese cloth. Pour filtered cocktail over large clear ice cube in a rocks glass. Top with yuzu earl grey foam.
