Ingredients

Eggs – 3 to 4 (whisked)
Fresh Coconut Water – 1 cup
Onion – 1 small (finely chopped)
Garlic – 2–3 cloves (chopped)
Ginger – 1 tsp (paste)
Green Chili – 1 (chopped, optional)
Capsicum – 2 tbsp (chopped)
Mushrooms – 2 tbsp (chopped)
Ajwain (Carom Seeds) – ½ tsp
Butter or Ghee – 1 tbsp (for tadka, optional for weight loss version)
Salt – to taste
Black Pepper – ½ tsp
Chaat Masala – ½ tsp
Fresh Coriander – for garnish
Lemon Juice – few drops

Step-by-Step Recipe

1. Prepare Coconut Water Base
Crack open a fresh coconut and extract 1 cup of coconut water.
Strain and keep ready.

2. Cook Vegetables
Heat a cast-iron pan.
Add chopped onions, garlic, ginger, capsicum, and mushrooms.
Sauté lightly (no oil needed).

3. Add Coconut Water & Eggs
Pour coconut water into the pan.
Add whisked eggs directly into the coconut water.
Scramble gently until soft and fluffy.

4. Optional Tadka (for extra taste)
In a separate pan, heat butter/ghee.
Add ajwain, onion, garlic, and sauté until golden.
Mix into the scrambled eggs for a rich flavour.

5. Finish & Serve
Garnish with chaat masala, coriander, green chili, and lemon juice.
Serve hot – light, healthy, and super tasty!
