Hey guys, it's NinaUnrated! How are you all doing today? OMG, I have some exciting news! You won't believe who I ran into today at my favourite Pho restaurant - AlphaDeLewis! I mean, I couldn't contain my excitement! I nearly fainted when I saw him - this guy is just 🔥🔥🔥.

Anyway, as you all know, I love Pho and it was just perfect to run into AlphaDeLewis at the restaurant. He's the one who introduced me to this delicious meal in the first place. You know what I'm talking about - the warm broth, the noodles (yum!), the beef, shrimp, lime, jalapeños - OMG, so many flavours!
We had such a great time together - AlphaDeLewis is even funnier in person and had me in stitches with his jokes. But seriously, this guy is just so handsome - his lips alone are drool-worthy. Ladies, listen up - he's single, so go show him some love and don't forget to follow him on social media!
The weather outside was a bit grey and drizzly, but that didn't matter because we were having such a good time. It just goes to show you that the company you keep can turn any day into a great day, no matter the weather.

Pho Recipe:
Ingredients:
1.5 lbs beef bones
1 onion, halved
3-inch ginger, halved
3 star anises
1 cinnamon stick
1 tbsp coriander seeds
1 tsp fennel seeds
2 cloves
6 cups of water
1 lb rice noodles
1/2 lb sliced beef
2 scallions, thinly sliced
1/2 cup cilantro, chopped
Lime wedges, hoisin sauce, Sriracha, and sliced jalapeños for serving
Instructions:
1. Preheat the oven to 450F and roast the bones for 30 minutes until browned.
2. Add the onion and ginger to a pot and char over high heat, then add the roasted bones, spices, and water.
3. Bring to a boil, then lower the heat to a simmer and cook for at least 6 hours.
4. Strain the broth and discard the solids. Skim the fat off the top of the broth.
5. Cook the rice noodles according to package instructions.
6. Divide the noodles into bowls and top with the sliced raw beef and scallions.
7. Ladle the hot broth over the top of the noodles and beef.
8. Garnish with cilantro and serve with lime wedges, hoisin sauce, Sriracha, and sliced jalapeños.
