It’s Diwali week! And we couldn’t be more excited to share a very special recipe that will definitely get you salivating! Aaji is making Rava Ladoos for us today - A traditional Indian ladoo using semolina and sugar syrup. It’s simple, festive, and super yummy! Definitely give this recipe a try if you want a twist from the usual Besan Ladoos 🌟

Wishing everyone a very prosperous and safe Diwali 🪔

Ingredients: (00:28)
• 3 cups of Rava (Sooji or Semolina)
• 3 cups of Sugar
• 1.5 cups of freshly grated coconut
• 3 tablespoons ghee
• 2 teaspoon Cardamom powder + powdered sugar

Instructions: (00:40)
• Add ghee to a cooking utensil/kadhai.
• Once it becomes hot, add the Rava (Sooji/Semolina) to the ghee.
• Mix it well.
• Once the colour of the Rava/Semolina changes a bit, turn the gas flame to low.
• Add the freshly grated coconut to the Rava/Semolina.
• The amount of freshly grated coconut added is half the amount of Rava/Semolina.
• The coconut should get roasted well with the Rava so that the ladoos last longer and don’t get spoiled.
• Now turn the gas flame to high and mix the Rava and coconut well.
• Move this mix to a plate.
• On a low flame, add sugar. The amount of added sugar is equivalent to the amount of Rava/Semolina.
• Add water to the sugar. The amount of added water is half the amount of sugar.
• The sugar and water should form a syrup. Keep on stirring it constantly.
• Once the syrup starts boiling, take a drop of the syrup on a small plate.
• Stretch the syrup between your fingers. It should stretch like a sticky string.
• On a low flame, add the roasted Rava/Semolina and coconut mix to the sugar syrup.
• Mix it well.
• Add the cardamom powder + powdered sugar mix to the roasted Rava/Semolina.
• The cardamom adds a nice smell to the ladoo.
• Keep on stirring constantly.
• Once it is mixed well, keep the mixture aside to marinate for atleast 1 hour.
• Stir the mixture once.
• After an hour, the mixture should turn a little thick. That makes it easier to roll it into ladoos.
• If you find the mixture too thick and tight to roll, sprinkle a little milk and mix it well before making ladoos.

Making ladoos: (04:59)
• Take some of the mix in your hand and start rolling it into a ball.
• Press it from all sides and turn it round and round.
• Take a raisin and press it into the rolled ball. Press and turn the rolled ladoo around in your hand.
• Roll the rest of the mix into ladoos.
• The ladoos are ready to eat!
