Espasol is a Filipino rice cake, it is made with toasted glutinous rice flour, coconut milk, brown sugar and macapuno. This delicacy is originated in Laguna province, you can find this at Nagcarlan, Pagsanjan, Alaminos, Liliw and Los Banos . Traditionally this snack has a cylinder shape and it is
wrapped individually in white paper.
Like bibingka and other kakanins this is usually sold in Holiday seasons.You can make this classic espasol more appetizing by adding flavor like ube and peanuts. The beautiful color of ube is very attractive and inviting.

Espasol ingredients:
1 1/2 cups toasted glutinous rice flour
2 cups coconut milk
1/2 cup evaporated milk
1/2 cup brown sugar(more or less)
1/4 tsp salt
2 tbsp peanuts, semi-crushed(optional)

Ube Espasol ingredients:
1 1/2 cups toasted glutinous rice flour
2 cups coconut milk
1/2 cup evaporated milk
1/2 tsp ube flavor
1/2 tsp violet food color
1/2 cup + 2 tbsp white sugar(or less)
1/4 tsp salt
1/2 cup sweetened coconut strings(macapuno)
