Lemon rice is go to breakfast/lunchbox recipe which can be prepared in minutes with the leftover rice. Follow this recipe to get the perfectly consistent, tangy and tasty lemon rice which makes you eat more.

INGREDIENTS:

Oil - 3 tsp
Mustard seed - 1/4 tsp
Ground nut - 3 tsp
Chana dal - 1 tsp
Urad dal - 1/2 tsp
Onion - 1 medium sliced
Green chili - 4 sliced
Turmeric powder - 1/4 tsp
Salt as per taste
Few curry leaves
Boiled rice - 2 cups
Few coriander leaves
Lemon juice - 3-4 tsp

Method of preparation:

1. Into a kadhai, add oil, mustard seed, ground nut, chana dal, urad dal and roast until it becomes crispy.
2. Add chopped onion, green chili and saute until it turns translucent.
3. Add turmeric powder, curry leaves, salt and mix well.
4. Now turn off the flame, add chopped coriander leaves, lime juice and mix well.
5. Add boiled rice and give a good mix. Serve with coconut chutney.
