PEA & MINT SOUP
Ingredients
½ onion, diced
15g butter
350g peas (fresh or frozen)
500ml vegetable stock
5-7 mint leaves roughly chopped
salt and pepper to taste
15ml crème fraiche to serve

Method
Warm a pan on a medium heat and add the butter
Once melted, add the onion and cook, stirring occasionally, for around 3-4 minutes until the onion is softened and translucent but not browning
Add the peas, and stir them to coat in the butter
Add the stock and bring to a simmer, 2 mins for frozen, 5 mins for fresh
Remove the pot from the heat and add the mint
Using a hand or bench blender, blitz the soup mix until smooth
Season with a little salt and pepper to taste
Serve with a dollop of crème fraiche

GREEN PEA HUMMUS
Ingredients
300g peas
1TBSP Tahini paste
Zest & juice of 1 lemon
1½TBSP extra virgin olive oil
1tsp Zaatar
6 large mint leaves
1 small garlic clove, minced
Salt & pepper to taste

Method
Cook the pea until tender but still bright green (don't overcook), then rinse them in cold, runny water
Add all the ingredients to a blender or food processor
Pulse or blend until completely smooth
If anything gets stuck or the hummus appears too thick, simply add 1 tablespoon of olive oil or water
Spoon into a serving bowl and enjoy
Will keep for 2-3 days in a fridge

PEA CURRY
Ingredients
1½TBSP olive oil
300g peas
1 onion, chopped
2 cloves garlic, minced
½ inch chunk ginger
2tsp powdered coriander
1tsp powdered smoked paprika
½tsp powdered cayenne
⅛tsp powdered cardamom
⅛tsp powdered cloves
⅛tsp powdered cinnamon
½tsp powdered turmeric
1 can coconut milk
1 can chopped tomatoes
salt and pepper to taste
chili flakes and fresh coriander for garnish

Method
Finely chop the onion, ginger, and garlic
Add the olive oil to a large, heavy bottom pan and add the onions, ginger, and garlic, and sauté for about 10 minutes, stirring often
Add the coriander, smoked paprika, cayenne, cardamom, cloves, cinnamon, turmeric, coconut milk, tomatoes.
Stir well and cook for about 2 minutes
Add the peas and stir well
Simmer on a low heat for about 5–7 minutes
Season with salt and pepper to taste.

PEA & RADISH SALAD

Ingredients
250g cooked and cooled peas
1tsp coarse salt
2TBSP olive oil
¼ small onion very finely sliced
¼tsp mild pepper flakes e.g. Aleppo
1tsp white wine vinegar
4 radishes, thinly sliced
6 or 7 mint leaves, chopped
Small bunch of chopped chives
Crumbled feta or shaved parmesan

Method

Saving the peas and cheese until last, mix all the ingredients in a bowl
Add the peas and cheese and stir gently
Transfer to a serving dish and enjoy – a very simple one!

PEA & PESTO PASTA

Ingredients
1 cup small pasta e.g. Orzo, Rosoni
1TBSP olive oil
2½TBSP basil pesto
1 small onion, diced
1 garlic clove, minced
1 summer squash or courgette, diced
1 cup cooked peas
Salt & pepper to taste

Method
Boil the pasta for 4 minutes. The pasta will be slightly underdone at this point, bit it will finish cooking later.
Reserve ½ cup of the water from the saucepan, then drain the pasta and set it aside.
Heat the olive oil in the pan and add the onion and garlic.
Sauté for 2 mins until starting to soften
Add squash and sauté for a further 2 - 3 minutes until both the squash and onion are softened, and the onion is just starting to turn a light golden brown
Add the pesto, saved pasta and the reserved pasta water
Bring the water to a simmer and stir for 1 minute until the water is absorbed
Serve immediately, garnished with freshly grated parmesan or parsley
