Ingredients & instructions👇

■Seasoned eggs (ajitsuke tamago)
Ingredients:
5-6 eggs
★2 green onions (spring onion)
★50ml (3.5 tbsp) water
★50ml (3.5 tbsp) soy sauce
★2 tbsp mirin
★2 tbsp sugar

Instructions:
1. Make the soup. Put all ★ ingredients in a pan and heat until the green onions become soft
2. Cool the soup
3. Boil the eggs for 6 and a half mins
4. Cool the eggs in cold water
5. Peel the shell
6. Put the eggs and soup in a plastic bag or a container
7. Let it rest for 24-48 hours

■Miso ramen soup (for one serving)
Ingredients:
1/2 clove garlic, grated
2-3cm (1inch) ginger, grated
sesame oil
1 tsp bonito powder
180ml (3/4 cup) water
180ml (3/4 cup) milk (or soy milk)

Instructions:
1. Heat garlic and ginger with sesame oil in the pan
2. Add water, bonito powder and milk
3. Heat the soup over low heat, don’t let it boil
4. Add miso

■ Salt ramen soup (for one serving)
Ingredients:
2 tsp Chinese chicken essence powder (雞精)
1 tsp sesame oil
1/3 tsp salt
400ml (1.7 cup)hot water

Instructions:
Mix all the ingredients for the soup, add noodles and toppings!

■ Soy sauce ramen soup (for one serving)
Ingredients:
1/2 tsp Chinese chicken essence powder (雞精)
1/2 tsp bonito powder
1/2 tsp ginger, grated
1/3 tsp black pepper
1.5 tbsp soy sauce
400ml (1.7 cup) hot water

Instructions:
Mix all the ingredients for the soup, add noodles and toppings!
